It's dinner time

Plantains Cooking
Let me first say if the person who sent me this recipe cooks like this every night- Kudo's to you!! I mean I guess looking back it wasn't that difficult, maybe it was b/c it was my first time to do it. She started the email with "this is one of those things I just wing"...right!!

So here is the recipe and I'll try to be a little more specific in hopes it will help me out when I remake this.  Oh yeah, and this was actually Tuesday nights dinner b/c my pulled bbq pork and squash was a bust last night. I just didn't like it very much.

Fish Taco's and Plantains

Ingredients:
Tilapia
Fish Taco Seasoning (she buys hers at whole foods but I picked up one at Kroger)
Red Onion
Cilantro
Pineapple (canned) maybe a small-medium size depending on your onion size
Jalapeno
Tortilla's
Plantains- Plantains need to be black when you purchase them or VERY close to it!
Sugar/Cinnamon
Olive Oil
Coleslaw Mix (in bag by salad section)

Fish
I quickly realized in order to get the fish and plantains ready at the same time the fish would need to go in the oven. I covered it with seasoning as the little packet instructed and stuck it in the oven at 350... for a while :). Until the plantains were prepared and done cooking (25 min?) no idea.

Coleslaw
Pour out of bag. Do not mix with mayo or anything else nasty just leave it as is. This is your "lettuce".

Pineapple Salsa
Chop onion, jalapeno, and add a handful of cilantro (to your liking) and pineapple. I actually used the juice too b/c I needed it to be sweeter. I also added a Tbsp of sugar. Put in processor and pulse to your liking.

Plantains
Cut into bite size pieces. Cover in sugar and cinnamon. Put a little Olive Oil in your pan and cook those babies up! They need to be browned/black on each side. It's tricky not to burn when trying to get them the right color. Just watch and taste test :)

That's all. Now make your taco and enjoy your little plantains on the side! Yum. You could do rice and beans with this too for more substance if needed.
