Monday Night Dinner

 If you ever had dinner with the Beasley crew growing up you might have had these! They are easy, delicious, probably kid friendly, and good for leftovers. I don't even have a recipe for them, we kind of do something different every time.

Chicken Roll Ups


Ingredients:
2 Chicken Breast
3-4 oz of Cream Cheese
Seasoning of choice
8 crescent rolls (from can)
Bread Crumbs
A lil' butter

Bake chicken breast and shred, or chop, or puree (whatever is your liking).
After you have shred the chicken mix it with the cream cheese and the seasoning of choice. Taste test until you like it!
Put about 1-2 Tbsp of mixture inside a crescent roll and roll em' on up
Place on cookie sheet
Put a little butter on top (I melted 1 Tbsp for all 8 and didn't use it all)
Bread crumbs on top of butter with maybe a little garlic salt, powder or minced

Cook as directed on package of rolls. About 10-15 minutes. serve with veggie.


On a different note...does anyone else have trouble getting yogurt into your diet? I do. Can't really take the texture of it or the taste sometimes. That said, I bought a few different brands to see if I could get used to it AND to see if Parke would take a liking (he doesn't) and came up with this. I saw it on a different blog and gave it a try. Not to bad....

Cinnamon Raisin bread (always toasted) yogurt of choice, a little honey...breakfast served!

yum! my kids inhale yogurt...they could eat like 2-3 containers everyday. Micah likes the vanilla yogurt with blueberries in it. You might try it with Parke...it is yummy. sometimes i put bananas in it & he loves that too.

that toast sounds good! i happen to love yogurt! even the plain kind; i know, a little weird! have you tried greek yogurt? it's a little thicker and fills you up more than regular yogurt. i usually put granola and berries on it. Chobani and Fage are both great brands!
