Get your Grub on

Okay, so it's not Tuesday which means we didn't have this last night. But, we did have one of these on Monday night and one on Tuesday night! We really enjoyed both. Here are the recipes.

The first recipe is:

Melissa Nunley's Chicken (she goes to WM and I don't even know who she is!)

1 whole chicken
1/2 cup honey
1/2 cup dijon mustard
fresh rosemary
1 tsp garlic
Carrots
Red Potato's

Mix top ingredients together except for carrots and red potato's. Pour over chicken and throw in the potato's (chopped up of course).

Preheat oven to 275. Cook for 2 hours

Put Carrots in for last hour....EASY and so delicious.
*we have done this with chicken breast and a whole chicken. Verdict is still out which one is better.

2nd Recipe:

Goat Cheese and Roasted Corn Quesadillas. *we served with black beans and brown rice*

1 cup fresh corn (we used can)
5oz goat cheese softened
8 corn tortillas (we actually used 12)
1/4 cup chopped green onion (I think we forgot this)
10 Tbsp bottled salsa verde
1 small can green chille's (we added this)

Heat nonstick skillet over medium heat. Add corn: saute 2 min.  Place in small bowl
Add Goat cheese to corn stir until well blended
Divide corn mixture evenly among 4 tortillas: spread to within 1/4 inch of sides.
Sprinkle each tortilla with 1 Tbsp green onion (again, forgot)
Drizzle each with 1-2 tsp salsa and top with remaining tortilla's.

Heat pan and go at it cooking the quesadilla's until they are golden brown.Cut into wedges and serve.
